Toasted ravioli is the rare finger food that packs well. Bread them, bake them crisp, and divide them into lunch boxes with fruit, veg, and marinara for dunking.

Steps
Heat the oven to 425°F and line a rimmed baking pan with parchment. Whisk the eggs in one shallow dish; stir the panko, parmesan, and seasoning in another. Dip each ravioli in egg, then crumbs; set on the pan and spray with cooking spray.
Bake 15 minutes until golden and crisp. Makes about 24 ravioli.
Divide into 4 lunch containers: ravioli in the big compartment, apple slices, green beans and carrots, and pasta sauce for dunking. Refrigerate up to 4 days.
Tip: Not packing lunch every day? The extra breaded ravioli are a fast dinner tossed with pesto or marinara, or stirred into soup.
