Cauliflower Fried Rice

Frozen cauliflower rice goes straight into a screaming-hot skillet and comes out with crispy edges and real fried-rice energy. Egg ribbons and a pile of vegetables make it a meal, not a side.

Steps

  1. Heat 1 tablespoon oil in a large skillet or wok over high. Scramble the eggs until just set, about 1 minute; transfer to a plate.
  2. Add the remaining oil and the frozen cauliflower rice. Spread it out and cook undisturbed 3 minutes, then stir and cook 3 minutes more.
  3. Add the peas and carrots, ginger, and garlic; cook 2 minutes. Stir in the soy sauce and vinegar, then fold in the eggs and green onions.
Tip: Do not thaw the cauliflower rice first. Frozen goes straight into the hot pan and fries instead of steaming.
