5-Ingredient Beef Chili

Chili is the original cook-once recipe: a pot big enough for tonight plus a planned leftover. Five ingredients is not a gimmick here, it is just how little this needs to be good.

Steps

  1. In a large saucepot, cook the ground chuck with the chili powder over medium-high for 10 minutes, breaking it up, until browned.
  2. Stir in the beans, tomatoes with their juice, and stock. Bring to a simmer, then reduce to medium-low and cook 20 minutes until thickened.
  3. Stir in the salt and pepper. Serve 10 cups with toppings; refrigerate the remaining 4 cups in an airtight container up to 3 days for the chili baked potatoes.
Tip: Buy the big family pack of ground beef when it is on sale, portion it, and freeze. Chili, tacos, and pasta sauce all start from the same bag.
Cook once, eat twice: Hold back 4 cups of chili. They become loaded Chili Baked Potatoes later in the week. Chili Baked Potatoes →
