Green Bean Casserole

Fresh green beans and a quick mushroom sauce beat the can every time, but the crispy onions on top are non-negotiable. This is the dish people quietly take seconds of.

Steps

  1. Heat the oven to 375°F. Blanch the beans in salted boiling water 4 minutes, then plunge into ice water and drain.
  2. Melt the butter in a large skillet over medium-high. Cook the mushrooms 6 minutes until browned; add the garlic for 1 minute. Sprinkle over the flour, stir 1 minute, then whisk in the milk and broth until smooth and thickened, about 4 minutes. Season with salt and pepper.
  3. Toss the beans with the sauce and spread in a 9x13-inch baking dish. Bake 20 minutes.
  4. Scatter the crispy onions over the top and bake 10 minutes more, until golden and bubbling.
Tip: Do not skip the ice bath. It locks in the bright green color so the casserole looks as good as it tastes.
