Nachos are a construction project, and the grill is the job site. Steak gets a hard sear first, then the whole loaded pan goes back on until the cheese surrenders.

Steps
Heat a grill for direct cooking over medium-high. Line a rimmed baking pan with foil and spray it. Season the steak with salt and pepper.
Grill the steak covered for about 10 minutes, turning once, until 135°F for medium-rare. Rest tented in foil for 10 minutes, then cut into half-inch pieces.
Drop the grill to medium. Spread the chips on the prepared pan and layer on BBQ sauce, cheese, jalapeño, and onion. Grill covered for 5 minutes until the cheese melts, then scatter the steak over the top and give it 1 more minute.
Finish with cilantro, guacamole, salsa, or sour cream. Makes about 10 cups.
Tip: Warm the chips on the pan for a few minutes before the toppings go on. Chips that lost their crunch come back to life, and they hold up better under the cheese.
