Margherita Pizza

Great margherita is about restraint: a thin crust, crushed tomatoes, fresh mozzarella torn by hand, and basil added after the bake so it stays green. The hot oven does the rest.

Steps

  1. Mix the flour, yeast, and salt; add the water and olive oil and knead 8 minutes until smooth. Oil the bowl, cover, and rise 1 hour until doubled.
  2. Set a pizza stone or steel on the top rack and heat the oven as hot as it goes for 45 minutes. Stir the tomatoes with the garlic and a pinch of salt.
  3. Divide the dough in two; stretch each thin on a floured peel. Sauce lightly, dot with mozzarella.
  4. Bake 7 to 10 minutes until blistered and golden. Top with basil and a drizzle of olive oil. Makes 2 pizzas.
Tip: Get the oven as hot as it goes and preheat the stone or steel a full 45 minutes. Home-oven pizza lives or dies on the preheat.
