One-Pot Tuscan Chicken Linguine

The pasta cooks in the same skillet as everything else, so the starch melts into the sauce and there is exactly one pot in the sink. Lemon and spinach keep it from feeling heavy.

Steps

  1. Season the chicken with salt and pepper. Heat the oil in a large high-sided skillet over medium-high; cook the chicken 2 minutes until browned, then transfer to a bowl.
  2. Cook the tomatoes 1 minute, then the garlic 30 seconds. Add the lemon juice and cook 30 seconds more.
  3. Add the linguine, spinach, and water; simmer, then reduce to low, cover, and cook 5 minutes. Return the chicken, cover, and cook 5 more minutes, until the pasta is al dente, the liquid has become a sauce, and the chicken is 165°F.
  4. Serve sprinkled with parmesan.
Tip: Break the linguine in half before it goes in. Full-length strands are a wrestling match in a skillet.
