Pecan Pie

Pecan pie is just a custard that sets around a pile of pecans. A pinch of salt and a splash of bourbon keep it from being one-note sweet.

Steps

  1. Heat the oven to 350°F. Set the crust in a 9-inch pie plate and crimp the edge. Spread the pecans evenly in the crust.
  2. Whisk the corn syrup, brown sugar, eggs, butter, vanilla, bourbon, and salt until smooth. Pour over the pecans.
  3. Bake 55 to 60 minutes, until the edges are set and the center still jiggles slightly. Tent the crust edge with foil if it browns too fast.
  4. Cool on a rack at least 2 hours so the filling sets before slicing.
Tip: Tent the crust edges with foil for the first half of baking. Pecan pie bakes long and the rim burns before the center sets.
Pair it with: Classic Eggnog → on Drink All Day.
