Philly-BBQ Chicken Sheet Pan Sliders

A rotisserie chicken is the weeknight cheat code, and this is one of its best uses. Peppers and onions, BBQ sauce, melted provolone, all baked together so the rolls go soft and the tops go golden.

Steps

  1. Heat the oven to 350°F and line a rimmed baking pan with parchment. Melt 1 tablespoon butter in a skillet over medium; cook the pepper and onion 5 minutes until tender. Stir the chicken and BBQ sauce together.
  2. Set the bottom halves of the rolls on the pan, cut side up. Layer on the chicken mixture, the onion mixture, and the cheese; cap with the top halves, cut side down.
  3. Brush the tops with the remaining tablespoon of butter and cover the pan tightly with foil. Bake 13 minutes until the cheese melts; uncover and bake 2 more minutes until the tops brown. Makes 12 sliders.
Tip: Keep the rolls attached while you split and fill them, then separate after baking. It is faster and the sliders hold together better.
