Pulled Pork Sandwiches

A pork shoulder, a dry rub, and a slow cooker are all that stand between you and the best sandwich of your week. Pile it on soft buns with slaw and pickles, and do not be shy with the portions.

Steps

  1. Rub the pork all over with the brown sugar, paprika, salt, pepper, garlic powder, and onion powder. Set in a 6-quart slow cooker and pour the vinegar around it.
  2. Cover and cook on low 8 to 10 hours, until the meat falls apart.
  3. Shred the pork with two forks, discarding the bone and large pieces of fat. Toss with the cooking juices.
  4. Pile onto buns with coleslaw and pickles. Makes about 10 sandwiches.
Tip: Shred the pork in the cooker juices, then let it sit ten minutes. It drinks the juices back up instead of drying out.
