Sheet Pan Citrus Tilapia with Broccoli & Carrots

Tilapia takes to a citrus-soy marinade like it was built for it. The vegetables roast first so everything finishes at the same time, and the leftover marinade gets boiled into a drizzle.

Steps

  1. Line a rimmed baking pan with foil and spray it; heat the oven to 425°F. Whisk the orange juice, lemon juice, 3 tablespoons of the oil, soy sauce, zests, garlic powder, and onion powder.
  2. Seal the tilapia in a zip-top bag with the marinade and refrigerate 1 to 4 hours.
  3. Toss the carrots, broccoli, salt, and remaining 3 tablespoons oil; spread on the pan and roast 20 minutes.
  4. Push the vegetables aside, add the tilapia, and roast 15 minutes until the fish is 145°F and the vegetables are tender-crisp. Boil the reserved marinade 5 minutes until slightly thickened; drizzle over the fish.
Tip: Since the oven is already on, roast an extra pan of broccoli and carrots for grain bowls and lunches all week.
