Thai Peanut Pork & Veggie Fried Rice

The eat-twice half of the kabob deal. Already-grilled pork and vegetables just need a hot skillet, ready rice, and peanut sauce to become a completely different dinner.

Steps

  1. Heat the oil in a large skillet over medium-high. Add the pork and vegetables; cook 3 minutes, stirring.
  2. Add the rice and water; cover and cook 7 minutes, stirring occasionally, until heated through.
  3. Stir in the peanut sauce and cook 2 minutes more. Serve topped with herbs, peanuts, and green onions.
Tip: Day-old rice fries better than fresh, but the ready-to-serve pouches plus a splash of water get you there in minutes with no planning.
