Pork Tenderloin & Veggie Kabobs

This is the cook-once half of the deal. Grill twelve kabobs, eat eight over a crunchy salad tonight, and the other four become tomorrow's Thai peanut fried rice with almost no work.

Steps

  1. Soak the skewers in water for 20 minutes. Heat the grill for direct cooking over medium-high.
  2. Whisk the lime juice, oil, zest, chili powder, salt, and pepper. Toss the pork in it, then thread pork, peppers, and onion alternately onto the skewers.
  3. Grill covered for 13 minutes, turning once, until the pork hits 145°F.
  4. Toss the salad kit with avocado and cilantro. Serve 8 kabobs over the salad; wrap the remaining 4, refrigerate up to 2 days, and use them in the Thai peanut fried rice.
Tip: Cut the pork a little bigger than the vegetables. Tenderloin cooks fast, and chunky pieces stay juicy while the peppers char.
